Madhbi is a dish that first originated in Oman, and is a significant part of Yemeni cuisine. While it’s not as popular as mandi, which also originated from Yemeni culture, Chicken madhbi in Abu Dhabi is a local favorite.
Madhbi in the Arabic language means “grilled by the sun”, which is about how cuts of meat, usually lamb or chicken, is cooked or grilled over hot stones under burning wood or charcoal.
The way how the meat is prepared is quite different compared to mandi and it is relatively simple. A dash of olive oil and a helping of a few Yemeni spices mixed together is all you need for the marinade. It is recommended to let the chicken marinate overnight for the best results.
The traditional madhbi plate is incomplete without rice. One of the more commonly used rice for Madhbi is Basmati rice, which, when cooked, expands twice its length.

Similar to meat, vitamins B1 & B2 are preserved in grilled vegetables.
