Madhbi is a meat & rice dish that is quite popular in UAE. Madhbi is usually made with meat, usually lamb, beef, or chicken. Chicken Madhbi in Abu Dhabi is very popular as it is very affordable, while meat madhbi is usually more favored due to the unique taste & flavor of the meat.
Madhbi originated in Yemen, in the Hadhrami region, but today, it is a dish that is loved by people all over the world. The main highlight of a madhbi dish lies in the way it is cooked, resulting in a crispy smoky exterior, and a dewy texture on the inside.
One of the secrets to the renowned taste of a madhbi dish is the recipe used to prepare it. A Yemeni spice mix called Hawaij is used to marinate the meat overnight. A mixture of different spices is used to enhance the flavors that one can enjoy as one savors this unique dish.
These spices usually include a mix of allspice, black & red pepper, cardamom, cloves, coriander, cumin, nutmeg, and paprika. The meat is usually left to marinate for a couple of hours, after which the meat is first cooked for about 30 minutes. Then, the meat is removed, but the broth is kept as it will be used to cook the rice, which is usually long grain rice, like basmati rice. The meat is then grilled over hot charcoal stones, in an underground pit, suspended above the pot of rice. The fat from the meat drizzles down into the bed of rice as it cooks, further enhancing its flavor.
This results in delicious flavored rice, with a crispy & smoky grilled chicken.
Mandi is another dish that is prepared similarly to Madhbi. However, the meat for mandi is first grilled in an underground oven called a tanoor, instead of being grilled directly over hot stones. Other rice & meat dishes like Kabsa, Majboos, and Madfoon are quite popular in Abu Dhabi. Each has its own technique & method of cooking while sharing a similar theme of being boiled.
There’s no activity that brings people together like sitting on the carpet floor, around a communal platter with friends & family. This is a scene that is a common sight that is seen in households here. Many restaurants in Abu Dhabi, like Al Mandi & Al Madhbi House, also feature family-friendly rooms, fitted with both tables & majlis arrangements so you can dine in as you please.
Madhbi is a very versatile dish, and it pairs well with a variety of side dishes, like salads; Arabic Salad & Fatosh Salad comes to mind. White Pepper soup is another great option. A spicy tomato salsa is a very common sauce that is often served alongside the dish. Once you’re done with this hearty & fulfilling meal, a glass of lemonade mint is a great minty & refreshing drink to seal the deal.
