The meat is then grilled over hot charcoal stones, in an underground pit, suspended above the pot of rice. The fat from the meat drizzles down into the bed of rice as it cooks, further  enhancing its flavor.

Mandi is another dish that is prepared similarly to Madhbi. However, the meat for mandi is first grilled in an underground oven called a tanoor, instead of being grilled directly over hot stones.
